Potato pancakes, latkes or rösti. There are many names for these potato patties, I like to call them “raggmunkar” which is what they are called here in Sweden. This recipe includes sweet potatoes, almond flour and more which is a bit different from the traditional approach.
The best way to eat them (according to me) is with some turkey bacon and lingonberry jam (also pretty swedish). I’ve also tried eating them as a complete meal, but adding some unflavoured protein powder in the mix. It won’t alter the taste, instead it might change the consistency a bit to the better, by making the patties hold together even better.
