Are you looking for something delicious yet healthy, vegan and full of protein? Then this Sesame tofu recipe is for you!

Tofu as you may know is made of soy. Soy milk to be precise. It contains a high amount of “complete protein”. This means high quality proteins that contain all the amino acids your body needs to grow muscles. This makes tofu one of the best (and definitely my favourite) sources of vegetarian protein. Other good ones when it comes to high quality proteins are quinoa and beans & rice (combined).

For this recipe you will need a firm kind of tofu. As oppose to soft or “silk” tofu which is good in desserts etc. but will just become a mess in this stir fry recipe.

Ingredients
  • 250 grams tofu firm
  • 100 grams rice noodles
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 taste sriratcha (if you like spicy)
  • 1 tbsp fish sauce
  • 1-2 tbsp sesame oil for frying
  • 1 handful bean sprouts
  • 1 handful spring onions
  • 1/2 paprika
  • 1 handful coriander fresh

Instructions
  1. Put the rice noodles in a bowl, cover with boiling water and let sit for about 10 minutes or util the noodles goes from transparent to all white (if the noodle package comes with directions, follow them)
  2. Mix together the lime juice, soy sauce, fish sauce, and sriratcha sauce in another bowl
  3. Dab the tofu with a paper towel to remove excess liquid and then cut the tofu into cubes of desired size
  4. Put the pan to medium high heat and fry the tofu in sesame oil until the surface turns crispy and golden coloured
  5. Add the noodles, the vegetables and the sauce, turn the heat down and toss together
  6. Let sit for a minute until the vegetables becomes tender
  7. Serve!
