This banana bread recipe makes a "bread" that is really light and fluffy and quite frankly feels and tastes more like a dessert.

The combination of eggs, banana and yoghurt is what keeps it from becoming dry without using any butter or oil. If you skip the sugar as well (I think sugar substitute in combination with the sweetness from the bananas works just as well as regular refined sugar) then this is a very healthy and delicious snack.

Instead of using dried blueberries something delicious to try is, raisins, cranberries or chocolate chips..!

Ingredients
  • 90 grams flour
  • 90 grams hazelnut flour
  • 2 whole eggs
  • 2 ripe bananas
  • 130 grams yoghurt or quark
  • 1/2 tsp salt
  • 3-4 tsp baking powder
Optional
  • 50 grams sweetener of choice
  • 50 grams blueberries dried
Servings: loaf
Instructions
  1. Preheat oven to 175ºC
  2. Mix the dry ingredients in a bowl
  3. Lightly beat the eggs, mash the bananas and combine with the yoghurt/quark (if you choose to use sugar substitute, honey or syrup, add that here too)
  4. Stir the wet ingredients into the dry
  5. Put the batter in a loaf pan and bake in the oven for 35-40 minutes
  6. Take out of the oven and let cool before enjoying
